Recipe: Peanut Butter Cookies

These are great cookies and easy to make! Try this recipe to satisfy Type 2 Diabetes cravings and keep your blood sugar low.

A Word to the Wise

Before going whole hog on eating these cookies, please go slow and check to see if there is any negative impact that you do not accept on your blood sugar level. Each person reacts differently to different foods, and beyond doing what I call a “blood sugar safety check,” any changes to your diet should be discussed with your healthcare provider. At Damndiabetes, we are not healthcare professionals or dieticians. We have learned from trial and error and have had significant personal experience in lowering blood sugar levels with our diabetes diet and simple exercise.

With all that behind us, we hope you enjoy this simple Peanut Butter Cooking Recipe. INGREDIENTS

  • 1 cup smooth peanut butter (well-stirred if using natural peanut butter)

  • Pinch of Artificial Sweetener.

  • One large egg

Note: The original recipe calls for ¾ cup of granulated sugar. As artificial sweeteners add a lot of sweetness to food, it is best to begin your first batch with a small amount. If you wish, you can always add more to your next batch.

INSTRUCTIONS

  1. You will need two oven racks to cook. With the racks, place them to divide your oven into three equal parts. Preheat your oven to 350 deg. F.

  2. Use two baking sheets lined with parchment paper or silicone baking mats and mix your dough.

  3. In a bowl, add your ingredients and mix until well mixed.

  4. Scoop 12 portions onto each baking sheet with a tablespoon, keeping them 2-3 inches apart.

  5. Using the back of a fork – the fork lines are essential – who makes peanut butter cookies without the fork marks? – squish each dough ball to about ¼ inch thick. Each cookie should be about 2 inches wide.

  6. Place the baking sheets in the hot oven and cook for 5 minutes. Rotate the baking sheets and cook for a further 5 – 7 minutes. The cookies are done when slightly puffed and the edges are firm.

  7. Let the cookies cool for approximately 30 minutes before removing them from the baking sheets.
